Since its founding in 1873, it has upheld the family motto of "handmade and excellent craftsmanship" and now brews only pure rice made from rice and rice koji. Oku Harima is not a clear liquor, but it has presence and is great to drink! I think that's as mainstream as you can think of it. Additionally, we brew using only locally grown rice.  This is a drink you can enjoy in your daily life. Among them, Shimomura Sake Brewery Okuharima may not be drinkable by everyone, but we are receiving expectations and support from many people. We will continue to work diligently to continue responding to our customers' expectations and support.  Additionally, because we are a brewery that specializes in doing business with local sake shops. Your local liquor store may not have it. Sorry to trouble you, but please check your nearby dealer rather than "the store where you can buy Oku Harima".  Good people have the power to impress people. We will continue to do so well.

Motoki Shimomura

米と米麹、水だけで…

“Organic sake” is brewed using a combination of rice, malted rice and water No additives such as distilled alcohol are used. Due to a shortage of rice following World War II, industrial sake became brewed using additives such as distilled alcohol, fragrances and sugars. Sake was originally made through an organic process by combining rice, malted rice and water. Traditional sake is referred to as "Junmai-shu”, which embodies the pure taste of rice. Junmai-shu is gentle on the body because it is brewed only from natural ingredients. You will feel great the next day after drinking it. We, Shimomura Shuzo Ten, put our hearts into making this “Junmai-shu.” We hope you will enjoy our original sake.

" There are no great tricks to hand-made produce” Since the founding of Shimomura Shuzo Ten in 1884, hand-made sake has been brewed here to make most use of the natural benefits of the local climate. Our sake is brewed by our five expert brewers. We have a family business motto "There are no great tricks to hand-made produce”, and we’ve never mechanized our production process or mass-produced. Instead, we continue to keep and honor our hand-made tradition. “Okuharima”; our hand-made organic sake, is brewed with our expert brewers’ passion and tradition. “Okuharima,” a handmade sake brewed with the passion and effort of craftsmen without going against the natural laws of sake brewing, is our specialty and is the sake closest to nature. Using good raw materials and making delicious sake is something every brewer thinks about. We always pursue that thought and strive every day to reach our ideal without limit. Another important thing in sake brewing is harmony (和, combination). No matter how good raw materials you use or how good technicians you gather, you cannot make good alcohol if you are distracted. At Oku Harima, we take on the challenge of creating sake in a careful and harmonious manner with the hearts of our craftsmen as one.

Hometown (mountain) of OKUHARIMA

Pashu-Oku Harima is located in the northwest of the Hashu Plain in Hyogo Prefecture, where the rich granary region of Setouchi spreads. Yasutomicho, where Shimomura Sake Brewery is located, is 90% surrounded by forests, and is blessed with abundant refreshing water, clean air, and above all, high-quality sake rice “Yamada Kin” available in luxury. Also, in winter, the cold air blowing in from the mountains of China creates an optimal climate for sake brewing, and since our founding in 1988, we have carefully maintained handmade sake brewing that takes full advantage of the benefits of this natural environment. Many people visit in search of natural scenery that shows off the subtle scenery in each season, and it is known as the gateway to the “original forest kingdom.”
